Spicy Lettuce Wrap

Lettuce wraps are quick and easy to prepare and you can use a vast array of ingredients. By replacing the bread with lettuce you can lower your consumption of carbohydrates and enjoy the contrast of warm, flavorful fillings with the cool crunch of lettuce. Some ideas for ingredients include those found in burritos, tortillas, pita bread, or spring rolls. Here is a particularly spicy variety that I enjoy.

Spicy Taco Seasoning Mix

Makes 2 batches
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

Spicy Lettuce Wrap

Ingredients
1 batch Spicy Taco Seasoning Mix
1 small onion – 1 cup diced
3 cloves garlic – minced
1 tbs coconut oil
20.8 oz Ground Turkey (Shadybrook Farms 93/7 Ground Turkey)
8 oz can Tomato Sauce
1 head Boston lettuce
½ cup finely shredded part skim cheese

Directions
Remove lettuce from stem, rinse and dry. While I used Boston Lettuce for this recipe, other varieties such as Bib, Iceberg, and Romaine may be used as well.

Mince garlic, dice onion and sauté with coconut oil in 12” sauce pan until onion is translucent. Brown ground turkey while using spatula to break up turkey into fine crumbles. Drain off fat drippings.

Place turkey mixture back on burner, add tomato sauce and seasoning mix. Heat mixture while stirring well.

Spoon turkey mixture evenly onto lettuce leaves; sprinkle with cheese. Roll up, serve warm, and enjoy!
