Frittata with Zucchini, Sun-Dried Tomatoes, and Sausage

Description
Serves 4
Great for breakfast or anytime! MissFits Jump-Start compliant.

Ingredients
1 ½ cup cubed zucchini (approximately ½” cubes)
1 Tbs. coconut oil
2 links al fresco chipotle chorizo fully cooked chicken sausage
1/4 cup diced sun-dried tomatoes
6 Omega 3 eggs
2 Tbs. half and half
1/2 tsp. Mrs. Dash Original Blend
Fresh ground black pepper to taste
1/4 cup fresh grated Parmesan cheese

Instructions
Cut up 1 small zucchini into ½” cubes (about 1 ½ cups). Cut sausage links into quarters lengthwise then into ½” cubes. Dice ¼ cup sun-dried tomatoes. Beat eggs with fat-free half and half, Mrs. Dash and pepper.

Preheat broiler to 350 degrees. Heat coconut oil over medium heat in heavy 12 inch non-stick or cast iron frying pan. Sauté zucchini for 3 minutes. Add sausage to zucchini and sauté 3 minutes more. Add diced sun-dried tomatoes and sauté another 2 minutes.

Pour eggs over zucchini mixture, and evenly distribute zucchini, sausage and tomatoes in eggs mixture. Cover pan and cook about 10 minutes, until eggs are nearly set but still glistening on top.

Sprinkle Parmesan over top of frittata and place under broiler 3-5 minutes, until cheese is melted, frittata is slightly puffed up and top is starting to brown.

Serve immediately. This is great topped with mango salsa.
